Our farmers cultivate fertile fields in Kyrgyzstan. For us, garlic isn’t just a crop—it’s a lifelong passion. We believe that the best things take time, patience, and a personal touch.

Every clove we plant in the ground in the fall passes through our hands several times over the course of the year—from spring weeding, to hand-topping the hardneck garlic, to careful harvesting and subsequent drying in the breeze. It is precisely this traditional and slow process that gives our garlic its exceptional shelf life and unmatched pungency. We then carefully store the garlic in a cool, shaded place so that it will last long after harvest.

How Garlic Grows

The Cycle of the Year in a Garlic Field

Growing high-quality garlic is a nine-month journey that requires a great deal of care. Each season plays a unique role in determining the garlic’s future strength and flavor.

Planting Cloves

Before the first frosts arrive, healthy cloves are planted by hand deep into fertilized soil, where they will take root over the winter.

Thinning and Weeding

A sharp spring pruning removes the flower stalks (flower heads) so that the plant can focus all its energy on growing the bulb.

Hand-harvested

July marks the peak of the year. The entire crop is dug up by hand at the exact moment it reaches maturity.

Slow drying

After harvesting and initial drying in the field, we transport the garlic to shaded areas, where it dries for several more weeks through natural air circulation.
